Tzatziki

No nonsense, just the right stuff, and good on almost anything

Tzatziki

  • 1 1/2 Cups Full Fat Greek Yogurt

  • 1/2 Cup Sour Cream

  • 1 English Cucumber (Seeds removed & Finely Diced)

  • 10 Sprigs Fresh Dill

  • 15 Sprigs Italian Parsley

  • Juice of 1/2 a Lemon

  • 1 Tsp Honey

  • Kosher Salt to Taste

Prep the Cucumbers

  1. Cut the English Cucumber in half length wise

  2. Using a small spoon scoop the seeds and center out of the cucumber

  3. Dice the de-seeded cucumber finely

  4. Set in a fine mesh strainer, and salt lightly

  5. Allow to sit and strain for about 30mins

Make the Ziki

  1. Meanwhile, mix the yogurt, sour cream, honey, lemon, dill, and parsley

  2. Add the strained cucumbers to the above mixture and taste for salt and brightness

  3. Add additional lemon juice and salt accordingly

  4. Chill for a few hours or overnight to allow the ingredients to get to know each other

  5. Serve with carrots, cucumbers, pita, grilled chicken, or spoon it straight!!
